Happy cooking!
Marinade mutton in turmeric, coriander powder and salt. Set aside.

Step 1

2 Onions- sliced
1 cup coconut grated
10-12 garlic cloves chopped
1 quill cinnamon
1 bay leaf
5 cardamom pods
Brown the onions, add salt and then add the garlic and coconut followed by the spices, brown this completely.

Cool and grind with some water. Set aside. We’ll call this paste 1.

Step 2

Onion – 1 chopped
Tomatoes-2 chopped
1 full raw mango chopped
5 red chillies dry
3 green chillies
1 tsp mustard seeds

In a pan, splutter the mustard seeds and both the chillies.
Add onions and brown completely.
Add the tomatoes and cook down completely.
Add the raw mango and water. Cook down.
Add salt.
Cook down to a jammy consistency.
Blend and set aside. Calling this paste 2.

Step 3
In a pressure cooker. Brown the mutton, add paste 1, stir well, coating all the pieces. Add paste 2. Add water and cook for 3-4 whistles. Check for seasoning. Serve.
